Gluten free, dairy free and fat free sweet potato cake
Two cooked and mashed sweet potatoes
A pinch of cinnamon
125gr gluten free flour (I used brown rice flour)
100gr grated jaggery (coconut sugar) or you could use brown sugar
250ml light coconut milk
Preheat the oven to 180 degrees.
Beat the eggs slightly and mix all the other ingredients.
Pour over a baking dish and bake for around 45mm until golden brown
