Christmas is round the corner and I am preparing all the hampers for picnics and gifts to clients and friends.
I love making pear marmalade and the jars look like sunshine.
An ideal gift for dinner parties.
1kg firm pears
3 lemons, zest and juice
First juice the lemons
Peel the pears, quartered and discard the the seeds and slice the fruit.
Submerge the pears in the lemon juice otherwise it will discolour.
Place the pears with lemon juice , the zest and the sugar in the saucepan and bring to the boil.
Make sure to stir constantly until the sugar dissolves.
Lower the heat to medium and cook the mixture for 30 to 40 mm until for a rich syrupy colour.
Cool the jam and and pack in sterilized jars.
Spread on a toast with salted butter is like reaching nirvana.
