Guacamole served with hot tortillas
I love to play with the shape and colours of the dishes.

3 ripe avocados
½ red onion, very finely chopped
1 green or red chilli finely chopped
1 tsp Maldon salt
Juice of 1 0r 2 limes
A small handful fresh coriander, chopped (optional)
1 ripe tomato deseeded and chopped (optional)
Put a quarter of the onion and half the chilli and salt in a pestle and mortar and mash to a rough paste.
Cut open the avocados, remove the stones and scoop out the flesh into the pestle. Roughly mash the flesh with a fork, adding half the lime juice as you go.
Stir in the rest of the lime juice and chilli, coriander, red onion and tomato.
Season with black pepper and salt.
Depending of the taste, add more lime juice or coriander.
