Roast chicken with grapefruit, garlic bay leaves and sage
1 whole chicken or 6 chicken legs
1 whole garlic
2 grapefruits, unwaxed, washed and cut in quarters with the peel
2 bay leaves and few sage leaves
2 tbsp butter
Salt and pepper
Clean the chicken and pat it dry.
Salt and pepper the inside and outside of the chicken.
Stuff the chicken with grapefruit, garlic and the herbs and scatter the rest of the segments around the bird.
Melt butter and brush it onto the chicken skin to make sure it’s brown and crispy.
Roast upside-down the chicken in hot oven 200 degrees for 15 minutes.
Remove the chicken from the the oven.
Turn down the temperature of the oven to 170 degrees , flip back the chicken on the baking tray and to the oven for 40 minutes or until brown golden colour.
Leave it to rest for 10 minutes before carving.
